Pumpkin waffle ingredients:
- ¼ cup melted butter
- 2 large eggs
- 4½ cups buttermilk
- 1 cup brown sugar
- 2 cups pumpkin puree
- 4 cups flour
- 1 teaspoon salt
- 2 tablespoons baking powder
- 6 tablespoons cornmeal
- ½ teaspoon cinnamon
- 3 teaspoons pumpkin pie spice
Instructions:
- Preheat a waffle iron, and grease it with cooking spray.
- In a medium bowl, combine the butter, egg, buttermilk, brown sugar, and pumpkin puree.

Ingredients
- ½ cup brown sugar
- ½ cup white sugar
- 2 teaspoons cinnamon
- ⅛ teaspoon nutmeg
- 2 tablespoons cornstarch
- 2 cups apple cider
- 2 tablespoons lemon juice
- ½ teaspoon vanilla
- ¼ cup butter
Instructions:
- Use a whisk to mix the brown and white sugars, cinnamon, nutmeg, and cornstarch in a saucepan.
- Slowly add the apple cider and lemon juice to the mixture.
- Whisk over medium heat until the syrup thickens to your desired consistency.
- Remove the syrup from the heat, and stir in the vanilla and butter.
