In-N-Out Burger popularized the hidden menu with their own special animal style burger recipe. Burger patties are seared and seasoned with mustard before being topped with extra special sauce, caramelized onions, cheese, and pickles.
Serves 4
Ingredients: For the carmelized onions

1 tablespoon butter

1 tablespoon olive oil

1 yellow onion, peeled and chopped

1 teaspoon salt
Ingredients: For the burger

1 pound ground beef
-
4 tablespoons yellow mustard
-
1 teaspoon salt
-
½ teaspoon black pepper
-
8 slices american cheese
-
4 burger buns
-
Lettuce leaves
-
Sliced pickles
Ingredients: For the animal style sauce
-
½ cup mayonnaise
-
2 tablespoons ketchup
-
1 teaspoon hot sauce
-
2 teaspoons sweet relish
-
½ teaspoon sugar
-
½ teaspoon apple cider vinegar
Instructions:
- In a large non-stick skillet, melt butter with olive oil, and saute onions until golden brown. Season with salt, and set aside (or refrigerate) until ready to assemble the burgers.
- Preheat griddle or large skillet over medium-high heat. Portion ground beef into 8 equal patties, spread with yellow mustard, and season with salt and pepper. Cook for 5–6 minutes, flipping halfway through, or until burgers are cooked to desired doneness. Top with cheese, and reduce heat to low and warm until cheese has melted.
- In a medium bowl, whisk together animal style sauce ingredients until blended.
- Spread sauce on split burger buns, and top with two patties, lettuce, and sliced pickles before serving.
Tip: You can make the animal style sauce and caramelized onions ahead of time for quick burger assembly. This recipe calls for two patties per burger, but you can add as many or as few as you’d like.
